Our small batch, barrel-aged spirit is handcrafted from surplus purple sweet potatoes farmed from the rich volcanic soil of the northern rivers of New South Wales (Australia). After distilling the spirit, it is aged in French oak wine barrels for up to 6 months. Aging in the barrel imparts a lustrous colour and enriched taste to the spirit imparting a complex and refreshing flavour.
